- 4 to 5 good size snapper fish. (Wash and clean and cut in round shapes)
- ½ brown onion
- Garlic/ginger/chilli paste (1 tsp. each)
- 2 tsp. curry power
- Few curry leaves
- ¼ cup coriander
- 1 tin coconut milk
- Salt to taste
- 2 tbsp. oil
- 1 cup warm water
In a wide frying pan, add oil and heat up
Brown onion and curry leaves and add ginger/garlic /chilli paste and curry powder, add little bit of water to make paste, now add fish, after few minutes turn the fish and cook another side for a minute, then add coconut milks and water and cook for 3-4 minutes. Be careful not to overcook as it may break up the fish.
It’s ready to serve with rice or roti.
