200g mince meat
6 small light green zucchini
1 1/2 cups Basmati long grain rice
2 teaspoon garlic paste
1 1/4 teaspoon salt
3 tablespoon olive oil
1 teaspoon cumin powder
1 teaspoon allspice
1 teaspoon red chilli powder
2 tablespoon tomato paste
1 green chilli finely diced
1 red chilli finely diced
1/2 of lime juice
2 tomatoes diced
1/2 cup chopped coriander
1 big potato sliced in round shape
1/4 teaspoon ground pepper
1 1/2 cups of warm water
Cook mince meat just itself drying all liquid.
Clean and cut zucchini in width half Trimp top and core out the seeds and make hole for stuffing
Peel the onion , cut on top and bottom and slice half way through still keeping whole onion Boil water and drop in onion and boil for 2 -3 minutes Onion should be soft and easily removed from its core
In a basin add mince , all spice , salt , oil, tomato paste, garlic, diced chilli, cumin powder, chilli powder and lime juice and mix well.
Remove onion single layers for stuffing
Dice the core of onion and add to prepared mixed
In a pot brush 1/2 teaspoon oil Layer the potatoes and the core of zucchini that you took out and sprinkle salt and pepper.
Take a teaspoon and stuff in the rice and meat mixture in Zucchini, do the same with onion , place a teaspoon mixture and wrap in onion .
Once all down place them on layered potato . If the mixture is still left , layer it on top of stuffed onion and zucchini.
Add 1 1/2 cups of warm water mix with tomato paste Cover the pot with aluminium foil and cook for 1 hour on hot plate on medium heat.
