500g lamb dice
2 cups rice
1 teaspoon garlic paste
1 teaspoon ginger paste
1 onion diced
1 teaspoon chilli paste or 1 fresh red chilli
1 potato thinly sliced round shape
1 egg plant round sliced
1 tomato round sliced
1 teaspoon all spice powder
1 teaspoon salt
3 cups water for rice
2 cups water for meat
1/2 cup chopped coriander
1/4 cup roasted almond or roasted pine nuts
3 tablespoon oil


Step 1

Salt and pepper the sliced egg plant and baked to soft texture or shallow fry in pan and set aside

Step 2

Clean and cut tomato and potatoes

Step 3

In a pan heat oil

Step 4

Add onion and fry to soft

Step 5

Add garlic, ginger and chilli stir

Step 6

Add meat stir and brown on high heat

Step 7

While browning add salt and all spice

Step 8

Now add water and cook till fully cooked and soft. To make process faster pressure the meat.

Once meat is done set a side

Step 10

Now in big pot layer the potatoes

Step 11

Layer egg plant on top of potato

Step 12

Layer the tomatoes

Step 13

Than layer the cooked meat

Step 14

The last layer is washed rice

Step 15

Add 2 of cups water cover with foil and cook on hot plate for 1 hour

Step 16

Do not stir while cooking , after and hour check if rice is cooked , you can add water if rice is still hard. Always adjust with stiring.

Once cooked off the heat .

Step 18

When serving flip it on a wide tray

Step 19

Garnish with finely chopped coriander and roasted almond.

Step 20

Enjoy your upside down rice cake.
