Aloo baigan aur Matar curry



3 potatoes diced
1 egg plant diced
1/2 cup frozen peas
1 tablespoon curry powder
1 teaspoon garlic paste
1/2 teaspoon ginger paste
1 teaspoon salt
3 tablespoon oil
1/2 teaspoon cumin powder
1 green and 1 red chilli finely diced
1/2 onion diced
1/4 cup chopped coriander
1 1/2 cup warm water
pinch of cumin seed ,and fenugreek seed


Step 1

Heat oil in a pot Add cumin and fenugreek seed

Step 2

Add onion and chilli and fry till soft Add garlic , ginger stir

Step 3

Add curry powder

Step 4

Add diced potato and egg plant

Step 5

Add cumin powder, salt stir

Step 6

And cook for 5 minutes to let eggplant and potato partially cook

Step 7

Add frozen peas and coriander stir

Step 8

Add water and cook on medium heat to reduce the water and with thick sauce appearance.
