Shakshuka

Ingredients:
- Oil
- 1 onion
- 2 garlic cloves crushed
- 1 Tsp Salt
- Handful of cherry tomatoes diced
- 1 tsp paprika powder
- 1 tsp ground coriander
- 1 tsp ground cumin
- Fresh herbs like coriander, mint, parsley roughly chopped
- 400 g (a regular tin) diced tomatoes
- 1 tbsp Honey
- water
- 5 free range eggs
Method
Step 1
Chop the onion in small pieces. Fry the onion with oil on medium heat for 5 minutes while stirring.
Step 2
Add ground cumin, ground coriander and the diced cherry tomatoes for another 5 minutes, on low heat, keep stirring.
Step 3
Add 400g diced tin/home made tomatoes, garlic, salt, honey, coriander, paprika powder, fresh herbs and let it all simmer for 10 minutes on low heat. Add water if needed to stop it from burning
Step 4
With a spoon, make four little shallow deepenings in the surface, and crack an egg in each. Put on lid and cook till eggs are cooked. Serve with turkish roll and any bread of your liking
