Aloo Anda (Egg) Curry2015-07-12
- 5 eggs
- 2 large potatoes
- ½ onion
- 3 cloves garlic
- 1 red chilli
- 1tsp curry powder
- ¼ tsp salt
- 1tbls cooking oil
- ¼ cup coriander
Boil egg, peel and set aside.
Cut potatoes in small cubes.
In a pot fry chopped onion, add garlic/chilli paste and stir for seconds, add curry powder and stir and add potatoes, salt and stir then add ½ cup water and cook for 5 minutes until potatoes is cooked.
Once the water dries add egg and stir.
Then add 1 cup water and simmer for 5-8 minutes or until the soup thickens.
Sprinkle coriander and serve with rice or roti.
Note: With the fork mark holes on the boiled eggs all side and then fry to medium brown.
Tips: Potatoes can be semi boiled for the best result and lessens the cooking time.
